Ingredients
Method
Preheat oven to 350°F; line 9- x 5-inch loaf pan with parchment paper, leaving excess on long sides.
In large bowl, whisk together flour, baking powder, baking soda, cinnamon and salt; set aside.
In separate bowl, using fork, roughly mash bananas. Whisk in cottage cheese, hemp seeds, eggs, sugar, oil and vanilla; until combined. Add to flour mixture and, using wooden spoon, stir just until moist and lumpy. Add chocolate and stir until combined (do not overmix).
Scape batter into prepared loaf pan; tap pan on counter a few times to release air bubbles. Gently place banana halves cut side up on top of batter, pressing lightly. Scatter a few pieces of chocolate on batter, if desired.
Bake until cake tester inserted in centre of loaf comes out clean, 60 to 65 minutes. Let cool in pan on wire rack for 10 minutes. Unmold; let cool completely, at least 1 hour. (Make-ahead: Can be sliced and individually wrapped in plastic wrap and stored in airtight container and refrigerated for up to 1 week or placed in resealable bag and frozen for up to 2 months.)
