Cream Cheese Filling

In bowl, using whisk, mix cream cheese, icing sugar, vanilla and salt until smooth. Set aside in refrigerator.

Red Velvet Cookies

In bowl, combine flour, cocoa powder and baking powder. Set aside. In large bowl, using electric mixer on med­ium speed, beat butter with both sugars until light and fluffy. Beat in egg and enough food colouring to reach desired colour. Add reserved dry ingredients; stir with wooden spoon until batter is smooth. Refrigerate for 30 minutes. (Make-ahead: Can be covered and refrigerated for up to 3 days or stored in airtight container and frozen for up to 1 month.)

Preheat oven to 350°F. Line baking sheet with parchment paper. Using hands, shape dough by 2 tbsp into balls; flatten into discs. Place 1 tsp Cream Cheese Filling in centre of each disc; fold dough over filling. Form into balls (roll between your hands to seal well). Place balls 3 inches apart on prepared baking sheet.

Bake until cookies are no longer shiny, 15 to 18 minutes. Let cool on baking sheet on wire rack for 2 minutes. Transfer cookies directly to rack; let cool completely. (Make-ahead: Can be stored in airtight container at room temperature for up to 3 days, or frozen for up to 2 months.)
