Dark Chocolate Mousse with Haskap Berry Compote

Method

In heatproof bowl set over saucepan of hot (not boiling) water, melt butter and chocolate, stirring often. Remove from heat and allow to cool slightly. Whisk in egg yolk until smooth.

In small saucepan, bring sugar and 1/4 cup water to a boil, stirring until sugar is dissolved. Boil, without stirring, until candy thermometer reads 114°C. Meanwhile, in large heatproof bowl, beat egg whites using electric mixer on high speed until stiff peaks form. Continue beating at high speed; pour hot syrup in thin drizzle over egg white mixture. Set aside.

In separate large bowl, beat cream using electric mixer on medium-high speed until soft peaks form. Using silicone spatula, gently fold in cooled chocolate mixture, then fold in egg whites in 3 additions.

Divide mousse among 6 cups or glasses. Cover and refrigerate at least 2 hours. (Make-ahead: Can be refrigerated for up to 24 hours.) Top with dollop of Haskap Berry Compote.

Haskap Berry Compote

In large saucepan, combine 2 cups frozen haskap berries, 1/2 cup granulated sugar and 1 sprig fresh tarragon, if desired. Bring to boil. Reduce heat and simmer until liquid is syrupy, about 10 minutes. Allow to cool and refrigerate for 1 hour. Discard tarragon. (Make-ahead: Can be stored in airtight container and refrigerated for up to 4 days.) Makes about 1 1/2 cups.

 

CHANGE IT UP! 

If your local grocery store doesn't carry haskap berries, substitute fresh blueberries for a sweeter flavour, or cranberries or raspberries for a more tart compote.
