This is a quick treat that kids and adults can assemble at the last minute. To achieve the best bat-like wings, break (rather than cut) the cookies in half to create a ragged edge. You need exactly one package of chocolate wafer cookies, so check closely at the grocery store to make sure none of them are broken.

Method

In bowl, beat cream cheese with butter until fluffy; beat in icing sugar and vanilla until smooth. Remove 1 tbsp and set aside.

Break 16 of the cookies in half to make wings; set aside.

Spread about 1 tbsp of the icing onto flat side of each of half of the remaining cookies; sandwich with remaining cookies. Insert 2 wings, rounded sides up, into icing on either side of each sandwich.

Dab some of the reserved icing onto back of each eyeball; press 1 large and 1 small eyeball onto each cookie.

Make-ahead: Store in airtight container for up to 3 days.
