Method

In small bowl, sprinkle gelatin over 3 tbsp water; let stand for 5 minutes. Meanwhile, in saucepan, combine strawberries, raspberries and blackberries, sugar and 2 tbsp water. Bring to boil; reduce heat and simmer, stirring occasionally, for 6 to 8 minutes. Using immersion blender, purée until smooth. Remove from heat; strain and return to pan. Whisk in gelatin mixture, stirring until dissolved. Let cool for 10 minutes.

Using electric mixer, beat cream until soft peaks form. Add vanilla; beat until stiff. Using spatula, fold gently into berry purée. Divide mousse among serving dishes; refrigerate until set, about 2 hours.

Compote

In small bowl, sprinkle gelatin over 2 tbsp water; let stand for 5 minutes. Meanwhile, in food processor, purée berries. Strain and pour into small saucepan. Add sugar; heat over low heat for 2 minutes. Remove from heat; whisk in gelatin mixture, stirring until dissolved. Spoon compote over mousse; refrigerate for at least 2 hours or up to overnight. To serve, garnish with fresh berries and mint leaves.
