These crispy cookies are far easier to make than you might think, thanks to our simple shaping trick (hint: it involves the rim of a glass!). Write your own personalized messages on notepaper and fold them into the cookies for a heartwarming end to a festive meal.

Method

In bowl, whisk together flour, cornstarch and salt. In separate bowl, beat together egg whites, 1/4 cup water, oil, vanilla and almond extract until frothy, about 2 minutes. Beat in sugar; beat in flour mixture just until smooth.

On silicone baking mat or lightly greased parchment paper–lined baking sheet, pour 1 tbsp of the batter, spreading with small offset spatula to 4-inch (10 cm) circle. Repeat on opposite end of baking mat to make another circle, leaving 4 inches (10 cm) between each.

Bake in 325°F (160°C) oven just until golden and no longer shiny, about 7 minutes. Working quickly, place 1 fortune note in centre of each cookie; using small offset spatula, fold cookies in half to make semi-circles. Remove 1 cookie from baking sheet; holding edges, bend, seam side up, over the edge of a drinking glass rim, bringing both ends of cookie together. Place in well of muffin tin to hold its shape; let cool completely. Repeat with remaining cookie. Repeat process with remaining batter. (Make-ahead: Store in airtight container for up to 3 days.)
