Method

In small pot, stir cornstarch into 1⁄3 cup water until dissolved. Add cherries, sugar and lemon juice. Bring to boil over medium-high heat, stirring frequently. Reduce heat to medium-low; simmer, stirring frequently, until cherries have softened and released their juices, about 15 minutes. Serve warm or let cool to room temperature. Mixture will thicken as it cools.

Test Kitchen tip: Use the ripest, juiciest, sweetest cherries for this compote. Out of season, substitute thawed frozen cherries.

 

Change it Up: BOOZY FRESH CHERRY COMPOTE

Substitute 2 tbsp cherry—or orange—flavoured liqueur for 2 tbsp of the water.
