Ingredients

Lime Sauce (recipe, see right):

Method

Preheat barbecue to medium-high heat(about 375°F); grease grill. Thread strawberries, honeydew, pineapple and watermelon alternately on 4 metal or soaked wooden skewers. Add lime wedge at end of each skewer. Place skewers on grill and cook until fruit is marked, turning halfway through grilling time, about 2 minutes.

In small bowl, combine honey and lime juice. Transfer skewers to serving platter and brush generously with honey mixture. Serve with Lime Sauce.

Lime Sauce

In bowl, using electric mixer on medium speed, beat 115 g softened cream cheese, 1/4 cup sugar, 1 tsp grated lime zest, 2 tbsp lime juice and 1/2 tsp vanilla until creamy. Stir in 1/4 cup 35% whipping cream and continue beating until light and fluffy. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 week.) Makes about 1 cup.
