Mango & Passion Fruit Crumble Bars

With a crumbly oat crust and a juicy fruit filling, these bars are a burst of flavour. Pair them with our Mango & Passion Fruit Margarita.

Method

Oat Crust

Preheat oven to 350°F. Line 8-inch square cake pan with parchment paper; set aside.

In bowl, whisk together flour, oats, brown sugar, salt and paprika. Stir in melted butter. Reserve 1 cup of the mixture for topping. Press remaining mixture into prepared pan; set aside.

 

Mango & Passion Fruit Filling

In small bowl, mix mango, passion fruit pulp, sugar and tequila. In separate bowl, dissolve cornstarch in cold water; stir into fruit mixture. Spread Mango & Passion Fruit Filling over reserved Oat Base. Sprinkle reserved Oat Crust mixture over top. Bake until golden and bubbling at edges, about 55 minutes. Let cool completely before cutting into squares. For firmer bars, chill for 30 minutes before slicing.

Serve with vanilla ice cream and lime zest, if desired.

 

Test kitchen tip

The cornstarch is key to helping the filling set properly. If your fruit mixture is extra juicy, increase cornstarch to 3 tbsp.
