Maple Orange Chômeur (Poor Man's Pudding)

Method

In saucepan, combine maple syrup, cream and orange zest. Bring to boil; boil until sauce is slightly thickened, about 2 minutes. Pour sauce into lightly buttered 13- x 9-inch baking dish. Set aside.

Preheat oven to 350°F. In bowl, combine flour and baking powder. In separate bowl, using electric mixer, beat together butter, granulated sugar and maple sugar until creamy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in flour mixture alternately with milk, making 2 additions of flour mixture and 1 of milk. Mix in vanilla. Pour batter over sauce in baking dish; smooth top.

Bake for 35 to 40 minutes or until top of pudding is golden and toothpick inserted in centre comes out clean. Top with whipped cream and garnish with mint, if using. Serve hot or at room temperature.
