Method

Streusel 

In medium bowl, combine pecans, oats, maple sugar and flour; using fork, stir in butter until moistened.

Muffins 

Preheat oven to 350°F. Line one 12-cup or two 6-cup muffin pans with paper liners.

In large bowl, combine flours, maple sugar, flaxseed, baking powder, baking soda, salt and cinnamon. In separate large bowl, whisk together milk, maple syrup, butter and egg. With wooden spoon, stir in dry ingredients; add dates and mix just until dough comes together (do not over mix).

Divide batter among prepared muffin cups. Sprinkle with streusel, then maple sugar flakes, if desired. Bake for 25 minutes or until toothpick inserted in centres of muffins comes out clean. Let cool in pan on rack for 5 minutes. Remove from pan; let cool completely. (Make-ahead: Can be stored in airtight container at room temperature for up to 2 days or frozen for up to 3 months.)
