Method

Spread crushed ice on rimmed baking sheet; using spatula, smooth top. Cover with plastic wrap and place in freezer. In large saucepan, boil maple syrup until candy thermometer reads 235°F, about 10 minutes. Using metal ladle, pour syrup over reserved ice to form 6-inch-long lines. Wait 5 seconds; place wooden stir sticks at ends of maple lines and roll toward other end, wrapping maple taffy around sticks.

Test Kitchen Tip: To check for the correct temperature without a thermometer, pour a few drops of boiling syrup into a glass of ice water. If the syrup forms small firm filaments, it’s ready to go.
