Mocha Chocolate Mini Cups

Method

In metal bowl placed over saucepan of hot but not boiling water, stir together dark chocolate and cream until choco­late has melted. In small bowl, dissolve instant coffee in vanilla. Whisk coffee mixture into melted chocolate mixture to make ganache.

Place 20 mini paper candy cups on rimmed baking sheet. Fill each cup with 2 tsp ganache. Refrigerate until ganache is firm, about 15 minutes.

Meanwhile, in separate metal bowl placed over saucepan of hot but not boiling water, melt white chocolate. Pour 1 tsp melted white chocolate over each cup of cooled ganache. Sprinkle with cinnamon and top with 1 coffee bean, if using. Refrigerate until choco­late is firm, about 1 hour. (Make-ahead: Can be refrigerated for up to 2 weeks.)
