In saucepan, whisk together egg yolks, coffee, sugar and 1/2 cup of the cream until sugar has dissolved. Bring to boil over medium heat, whisking constantly. Remove saucepan from heat. Add chocolate chips and stir until chocolate has melted and mixture is smooth. Pour into bowl, cover and refrigerate until cold, at least 2 hours. 

Remove chocolate mixture from refrigerator and let warm slightly. Meanwhile, in bowl, using electric mixer on high speed, beat remaining cream until stiff peaks form, about 5 minutes. Using spatula, gently fold chocolate mixture into whipped cream. 

Divide mocha mousse among four to six 1/2-cup bowls or coffee mugs. Cover with plastic wrap and refrigerate for at least 2 hours. (Make-ahead: Can be refrigerated for up to 2 days.)

Sprinkle mousse with cookie crumbs and coffee beans, if using.
