Method

Preheat oven to 375ºF. Line muffin pan with paper liners. In bowl, using electric mixer on high speed, cream butter.

Beat in brown sugar until mixture is pale and fluffy, about 2 minutes. Beat in eggs and vanilla on medium speed for 1 minute.

In separate bowl, combine flour, baking powder, baking soda, salt and 1 1/4 cups of the muesli. Stir dry ingredients into butter mixture in a few additions, alternating with milk. Stir in apple just until combined (do not overmix).

Transfer batter to prepared muffin cups, filling each liner about three quarters full. Sprinkle remaining muesli on top. Bake until tops of muffins are puffed and golden and cake tester inserted in centres of muffins comes out clean.
