Making your own granola bars has never been easier thanks to this no-bake recipe that calls for almond butter, pepitas, mixed nuts and dried cranberries.

Method

Mist small baking sheet with cooking spray; line with parchment paper, leaving overhang on 2 long sides. 

In saucepan, combine brown rice syrup, almond butter and salt over medium heat; cook, stirring often, until melted and smooth, about 4 minutes.

Meanwhile, in large bowl, stir together granola, pepitas, nuts and cranberries. Stir in almond butter mixture to coat; scrape onto prepared pan. Cover with large sheet of parchment paper. Using rolling pin or hands, gently roll or press granola mixture firmly to compact. Freeze until firm, about 15 minutes. Cut into 30 bars. (Make-ahead: Refrigerate in airtight container for up to 2 weeks or freeze for up to 1 month.)

Makes 30 bars.
