Orange Sabayon

Sabayon is an airy French dessert reminiscent of mousse. Our version incorporates fresh orange for a bright take on the treat.

Method

In double boiler over medium-low heat, whisk together sugar and egg yolks for 1 minute. Whisk in orange juice, wine and orange-flavoured liqueur. Whisk until mixture is pale and fluffy, 8 to 10 minutes.

Divide orange segments among 4 oven-safe individual serving dishes; divide sabayon equally over top. Using kitchen torch or oven broiler, caramelize tops of sabayons. Serve with angel food cake slices.
