ORANGE TIRAMISU

Method

In large bowl, using electric mixer on medium speed, beat egg yolks with half of the sugar. Beat in mascarpone until mixture is creamy. Set aside.

In separate bowl, using electric mixer with clean beaters on medium-high speed, beat egg whites with remaining sugar until stiff peaks form. Using spatula, gently fold egg whites into reserved mascarpone mixture.

In small bowl, combine orange juice and orange-flavoured liqueur. Working quickly, dip 3 ladyfingers in orange juice mixture. Place half of the dipped cookies (breaking in chunks, if necessary) in 225 ml dessert glass. Cover with 1/4 cup of mascarpone filling, top with other half of cookies. Cover with 1/4 cup of remaining filling. Set aside. Repeat with 5 other dessert glasses and remaining ingredients, making 6 tiramisus total. Cover with plastic wrap and refrigerate for 3 hours. (Make-ahead: Can be refrigerated overnight.) Sprinkle with cocoa powder before serving.

Want to skip the alcohol? Simply replace orange flavoured liqueur with the same amount of orange juice.
