Peanut Butter Fudge Balls

In bowl, mix Date Purée, peanut butter, cocoa powder and salt until mixture is smooth. Stir in ground almonds (mixture should hold together when pressed with hands. If necessary, add more ground almonds, 1 tbsp at a time.)

Using your hands, shape mixture into 1 tbsp balls. Place balls in single layer in airtight container; refrigerate for at least 1 hour. (Make-ahead: Can be refrigerated for up to 1 week.) Roll balls in ground almonds or cocoa powder, if desired.

Change it up

For flavour variation, you can use a vanilla, caramel or chocolate date purée. You can find these flavoured purées in some grocery stores, but if you prefer to prepare it at home, simply add 1 tsp vanilla or caramel extract, or 2 tbsp cocoa powder, to the Date Purée
