Pear, Yogurt & Granola Muffins

These mouth-watering muffins are not only moist and sweet, but they’ve also got serious crunch!

Method

Preheat oven to 350°F; grease muffin pan or line muffin cups with paper liners. In large bowl, combine flour, baking powder and salt. In separate bowl, combine yogurt and baking soda. Let stand for 2 minutes until mixture has puffed up. In third bowl, whisk together oil, brown sugar and egg. Whisk yogurt mixture into brown sugar mixture; pour over dry ingredients. Stir in pears and 1/2 cup of the granola with wooden spoon just until dough is moist.

Spoon batter into prepared muffin cups. Sprinkle with remaining granola. Bake until cake tester inserted in centre of muffins comes out clean, 20 to 25 minutes. Place pan on wire rack and let cool for 5 minutes. Transfer muffins directly to rack; let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or frozen for up to 3 months.) Serve muffins with Honey Yogurt Topping.

Honey Yogurt Topping

In small bowl, whisk together 1/4 cup 2% plain Greek yogurt, 1/4 cup softened cream cheese and 2 tbsp liquid honey. (Make-ahead: Can be stored in airtight container and refrigerated for up to 2 days.)
