Method

Pineapple & Coconut Cream

In small bowl, sprinkle gelatin over 2 tbsp water and let stand for 5 minutes.

Meanwhile, in saucepan, combine coconut milk, cream, pineapple juice, sugar and zest. Heat over low heat, stirring, until sugar has dissolved (do not boil), about 5 minutes. Whisk in gelatin mixture until dissolved. Remove pan from heat. Pour mixture into four, to six 2-cup glasses. Cover with plastic wrap and refrigerate until cream has set, about 6 hours. (Make-ahead: Can be refrigerated for up to 2 days.)

Toppings

In bowl, mix diced pine­apple with rum to coat well. Let stand 30 min­utes at room temperature.

Garnish panna cotta with pineapple-rum mixture and coconut, and cherries, if using. Drizzle with honey, if using.
