Poached Apples in Cider & Ginger

Method

In ovenproof saucepan or small casser­ole dish, combine cider, apple juice, brown sugar, ginger and mint. Bring to boil over medium-high heat and simmer for 5 minutes. Remove from heat.

Preheat oven to 350°F. Place apples in cider mixture. Cover pan and bake until apples are tender, 20 to 25 minutes. Remove pan from oven and let apples cool in syrup. (Make-ahead: Can be stored in airtight container and refriger-ated for up to 2 days. Bring to room temperature before serving.)

Divide apples among dessert plates or ramekins. Drizzle with syrup.

Test kitchen tip

For an elevated version, sprinkle the poached apples with crumbled ginger cookies or granola, and serve with vanilla ice cream or plain yogurt.
