This cake is based on milopita, a rustic coffee-style cake from Greece that features typical Greek ingredients like olive oil and thick yogurt along with sliced apples.

Method

Cake Preheat oven to 350°F. Grease 8-inch round cake pan and line bottom with parchment paper, cut to size. Grease parchment paper; set aside.

In bowl, stir together flour, baking powder, cinnamon, salt and sugar. Stir in chopped apple; set aside.

In separate bowl, whisk eggs with oil and yogurt until smooth. Whisk in flour mixture in a few additions, just until combined (do not overmix). Pour batter into prepared cake pan, smoothing top.

Topping Working with a few at a time, fan apple slices over batter. In small bowl, using your hands, mix flour with granulated and brown sugars and butter until mixture resembles coarse crumbs. Sprinkle around apples.

Bake until cake tester inserted in centre of cake comes out almost clean, with just a few crumbs, 40 to 50 minutes. Let cool in pan for 15 minutes. Carefully unmold cake and sprinkle with icing sugar, if using. (Make-ahead: Can be stored in airtight container and refrigerated for up to 4 days.)
