Sea Buckthorn Meringue Pie

Pie Crust

In food processor, pulse together flour, sugar and baking powder. Add butter; pulse until mixture reaches consistency of coarse crumbs. Add eggs; pulse until mixture is crumbly. Press evenly into bottom and up sides of 9-inch fluted pie pan. Using fork, prick bottom of crust all over. Place in refrigerator until firm, about 30 minutes.

Preheat oven to 400°F. Line crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove pie weights and parchment paper; bake until crust is golden brown, about 10 minutes. Transfer to wire rack; let cool completely.

Sea Buckthorn Cream

In large saucepan, whisk sea buckthorn juice with sugar and agar-agar; bring to boil, whisking constantly. Reduce heat; simmer for 1 minute. Pour into 13- x 9-inch cake pan; cover and refrigerate until mixture has set, about 2 hours.

In food processor, pulse sea buckthorn jelly and softened butter until mixture is smooth, about 1 minute. Spread over cooled pie crust, smoothing top. Set aside in refrigerator.


In metal bowl, using electric mixer on medium speed, beat egg whites and sugar until foamy. Place bowl over saucepan pan of hot (not boiling) water; beat on medium speed until candy thermometer reads 140°F, about 5 minutes. Remove bowl from saucepan and beat on high speed until stiff peaks form.

Using spatula, spread meringue over top of pie. Using culinary torch, brown meringue, if desired.

Did you know? Grown in Quebec, sea buckthorn is a thorny bush loaded with small orange berries whose tangy flavour is reminiscent of passion fruit and citrus. These berries can be found frozen or juiced in health food stores. Agar-agar is a flavourless vegetable gelatin produced from seaweed. It can be found in health food stores and Asian supermarkets.
