Blondies are famously unfussy but remarkably delicious. They lend themselves to plenty of adaptations, including this iced, strawberry-filled one. Every crumb of these disappeared from our Test Kitchen in record time.

Method
In large bowl, beat butter with brown sugar until fluffy; beat in eggs, 1 at a time. Beat in vanilla. Whisk flour with salt; stir into butter mixture in 2 additions. Spread half of the batter in parchment paper–lined 13- x 9-inch (3 L) baking dish; smooth top.Microwave jam on high until melted, about 30 seconds. Drizzle over batter; spread evenly. Top with remaining batter; smooth top. Bake in 325ºF (160ºC) oven until tester inserted in centre comes out clean, 35 to 40 minutes. Let cool in pan on rack.
Strawberry Icing: In bowl, beat butter with icing sugar until fluffy; stir in jam and vanilla. Spread over blondies. Transfer to cutting board; cut into bars.
