Beat the heat with this three-ingredient icy treat that appeals to the kid in all of us.

Method

In small saucepan, bring sugar and 1/4 cup water to boil; cook, stirring often, for 1 minute. Let cool completely.

In food processor, purée strawberries with vanilla until smooth. Add sugar mixture; blend until combined. Pour into 8-inch (2 L) square cake pan; cover with plastic wrap and freeze until firm, about 4 hours. (Make-ahead: Freeze for up to 1 week.)

Using fork, scrape mixture to form crystals. Spoon into serving dishes or paper cones.

Tip from the Test Kitchen:
To keep the snow cones from melting quickly, chill the serving dishes in the freezer for about 20 minutes before serving.
