Triple Chocolate Gooey Brownies

Method

Preheat oven to 350°F. Grease 8-inch square cake pan; set aside.

In large microwaveable bowl, heat chocolate and butter on medium-low for 2 minutes. Stir until melted and smooth.

Stir in sugar, then eggs and vanilla. Stir in flour until combined. Pour batter into prepared pan. Bake until cake tester inserted in centre of brownies still has a few moist crum- bcrumbs clinging, about 25 minutes. Let cool in pan on wire rack. Spread Chocolate Ganache over top; drizzle with any remaining ganache.

Chocolate Ganache
In heavy-bottomed saucepan, heat 1/2 cup 35% whipping cream over medium- high heat until bubbles start to form around edge. Remove from heat. Add 180 g chopped bitter- sweet chocolate (do not stir). Let stand for 5 minutes. Stir until smooth. Let stand for 15 minutes. Makes about 2 cups.
