Method

Cake Preheat oven to 350°F. Grease and line 9- x 13-inch cake pan with parchment paper.

In bowl, whisk together flour, baking powder and salt. In large bowl, using electric mixer on medium speed, beat butter with sugar, eggs and vanilla until light and fluffy, about 3 minutes.

Reduce speed to low; beat in flour mixture in three additions, alternating with milk (beat just until combined and smooth; do not overmix). Scrape batter into prepared cake pan, smoothing top with spatula.

Bake until cake tester inserted in centre of cake comes out clean, 30 to 35 minutes. Let cool completely. Unmold cake, wrap in plastic wrap and refrigerate for at least 4 hours, or overnight.

 

Cream Cheese Filling In bowl, using electric mixer on high speed, beat egg whites until stiff peaks form, 3 to 4 minutes; set aside.

In separate bowl, whisk together egg yolks and sugar until pale and light, about 2 minutes. Using electric mixer with clean beaters on high speed, beat in cream cheese until smooth, about 2 minutes. Gently fold in reserved egg whites. Gently stir into Whipped Cream.

 

Assembly Cut cold cake into 1-inch cubes. In large bowl, gently stir together mangoes, papaya, pomegranate arils, passion fruit pulp and dragon fruit.

Arrange half of the cake cubes over bottom of 4-litre trifle bowl; spoon half of the Cream Cheese Filling over top. Spread with half of the fruit mixture. Repeat with remaining cake, Cream Cheese Filling and fruit mixture. Refrigerate until ready to serve (a few hours at most). Sprinkle with lemon basil, if using.

 

 

Whipped Cream Just before assembling trifle, in bowl, using electric mixer on high speed, beat 3/4 cup cold 35% whipping cream until soft peaks form, 2 to 3 minutes. Beat in 3 tbsp granulated sugar, one tablespoon at a time, beating until stiff peaks form, 1 to 2 minutes. Add pinch cream of tartar, if desired; beat until combined, about 1 minute. Makes 1 1/2 cups.
