Method
Vanilla Panna Cotta In small bowl, dissolve gelatin in 2 tbsp cold water; let stand for 5 minutes.
In small saucepan, heat cream, sugar and vanilla over low heat for 3 minutes. Remove from heat. Stir in gelatin until completely dissolved. Whisk in yogurt until smooth and even. Divide among 4 to 6 ramekins or dessert cups. Cover with plastic wrap and refrigerate for at least 3 hours.
Olive Oil Caramel In bowl, using small whisk or fork, vigorously whisk 3 tbsp of the maple syrup and olive oil until mixture thickens, about 1 minute. Whisk in remaining maple syrup until thick and glossy. Drizzle Olive Oil Caramel over Vanilla Panna Cottas and top with sliced strawberries, cookie crumbs and fleur de sel, if using.
