Place sugar on small plate. Rub lemon wedge on side of a champagne flute to moisten it, then dip into sugar.

In prepared champagne flute, using cocktail spoon, gently mix vermouth and Cranberry Ginger Coulis. Pour in sparkling wine.

Cranberry Ginger Coulis

In saucepan, combine 3 cups frozen cranberries, 1 cup water, 3/4 cup maple syrup and 2 tsp grated fresh ginger. Bring to boil. Reduce heat to medium and simmer for 15 minutes. Using blender or handheld blender, purée cranberry mixture, then strain through sieve to obtain a very smooth texture. Let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days.) Makes about 2 cups.
