Fresh Ginger Beer

This ginger-infused beverage is as refreshing as it is flavourful.

Method

In bowl, stir together 1 cup of water, the sugar and yeast until sugar is dissolved. Using funnel, pour mixture into thick 1.5 to 2-litre plastic bottle. Add ginger, lemon juice and remaining water to bottle; seal and shake to mix. Let stand at room temperature until small bubbles form on surface and bottle is tight, 12 to 24 hours. (Monitor bottle regularly during fermentation; relieve pressure by loosening, but not opening, cap.) Very carefully open bottle over sink and allow gas to escape. Strain ginger beer and transfer to glass bottle or jar. Refrigerate until ready to serve. (Make-ahead: Can be refrigerated for up to 2 days.)

Change it up: Caribbean Ginger Beer

Replace lemon juice with lime juice; replace granulated sugar with blond cane sugar.

 

Test Kitchen Tip: Be sure to prepare your ginger beer in a plastic bottle and leave some room at the top. Because gases are emitted during the fermentation process, glass bottles should be avoided since they may explode.
