In small saucepan over medium heat, add strawberries and sugar; cook, stirring often, until strawberries cook down and mixture is syrupy, with small chunks remaining, 8 to 10 minutes. Remove from heat and stir in vanilla. Transfer to airtight container and refrigerate for at least 2 hours.
Scoop strawberry syrup into 2 tall glasses, pressing strawberry chunks with back of spoon on sides of glasses. Add ice cubes, if using. Fill glasses with milk. Garnish with fresh strawberries, if desired.
