Iced Coffee Protein Smoothie

Method

In cup or bowl, whisk coffee with Date Purée until combined. Pour into blender; purée with milk alternative,
ice cubes, protein powder and banana.

Date Purée

In microwaveable bowl, combine 3 cups pitted dried dates (about 500 g) and 1 2/3 cup water. Microwave on high about 4 minutes. Using blender or hand mixer, purée until smooth. (Make-ahead: Can be stored in airtight container and refrigerated for up to 2 weeks or frozen for up to 3 months.) Makes about 2 1/2 cups.

Test kitchen tip

For an extra boost of flavour (and caffeine), replace the ice cubes with frozen coffee cubes. To do this, simply pour brewed coffee in an ice cube tray and freeze.
