Method

In blender, purée pineapple chunks, coconut milk, pineapple juice, sugar and vanilla until smooth. Transfer to glasses; top with cherries and pineapple chunks, if using.

 

Change it up

For a happy hour version of this delicious drink, you can add 1 to 2 ounces of dark rum per serving.
