In this sparkling cocktail, mint gives the juicy strawberry a fresh finish.

Strawberry Simple Syrup:


Strawberry Simple Syrup: In small saucepan, bring sugar and ⅓ cup water to boil, stirring until sugar is dissolved. Add strawberries; cook, stirring occasionally, until softened, about 2 minutes. Remove from heat; let cool completely, about 1 hour.

Strain through fine-mesh sieve, pressing on solids with back of spoon and scraping bottom of sieve to extract pulp; discard solids.

Cocktails: In large pitcher, using muddler or handle of wooden spoon, mash together strawberries, lime juice and salt; pour in 1/2 cup of the Strawberry Simple Syrup, vodka and sparkling water, adding more syrup to taste, if desired. Fill with ice cubes; stir to combine. Pour into glasses; garnish with mint.
