Method

Preheat oven to 350°F. Line baking sheet with parchment paper; set aside.

In large bowl, add cottage cheese, eggs, oats, sunflower, flax and hemp seeds, baking powder and salt. Mix well until combined. Using spatula, scrape mixture onto prepared baking sheet and using your hands, form loaf about 2 inches high, pressing lightly. Bake until bread is golden brown and firm, about 1 hour. Let cool before slicing. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 week or sliced and frozen for up to 3 months.)
