Chocolate Syrup
Use this chocolate syrup to create old-fashioned soda fountain drinks in your own home.

Servings: 1 cup

Ingredients:
6 oz (180 g) semi-sweet chocolate
1/2 cup (125 mL) evaporated milk

Preparation:

Melt chocolate in a bowl over simmering water. Whisk in evaporated milk and 1/3 cup warm water. Allow to cool.

We put this syrup into a fountain glass on top of ice cream for an old-fashioned sundae. As you can see in the image at left, it was a tasty success.

Cherry Cola
Flavour your own cola and don't forget the bendy straws!

Servings: 1

Ingredients:

8 oz (250 mL) cola
2 tbsp (15 mL) marschino cherry juice

Preparation:
Pour the cherry juice into the bottom of a tall glass. Add 1/2 cup of ice cubes. Pour cola over and stir.

Variation
Vanilla Coke: Omit cherry juice, add 2 tsp vanilla.
Chocolate Coke: Omit cherry juice, add 1 tbsp chocolate syrup.

Strawberry Milkshake
Leave your milkshake a little chunky for a real old-fashioned texture.

Servings: 3 servings

Ingredients:
1 cup strawberries, sliced
2 tsp (15 mL) vanilla extract
1 1/2 cups (375 mL) milk
2 cups (500 mL) vanilla ice cream

Preparation:
Place strawberries, vanilla and milk into a blender container. Pulse four times. Add ice cream and blend. Serve immediately.

Variations
Vanilla Milkshake:
Omit strawberries, use 1 tbsp vanilla extract.
Chocolate Milkshake: Omit strawberries, add 4 tbsp chocolate syrup.

Vanilla Malted
Malted milk is a mixture of powdered barley, wheat and milk that was originally invented as a nutritional supplement for infants. The taste was such a hit in the fifties, drug stores started adding it to ice cream as a malted and the Malt Shop was born. You can find malted milk powder under the name Ovaltine or Horlicks.

Servings: 3 servings

Ingredients:
2 cups (500 mL) vanilla ice cream
1 1/2 cups (375 mL) milk
1 tbsp (15 mL) vanilla extract
4 tbsp (50 mL) malted milk powder

Preparation:
Combine ice cream, milk, vanilla, and malted milk powder in a blender container. Pulse to combine. Serve immediately.

Variation
Chocolate Malt:
Add 4 tbsp (50 mL) chocolate syrup.

This drink is a New York native that contains neither eggs or cream! The ideal egg cream has a frothy white top covering a chocolate base, streaks of chocolate in the glass are also traditional.

Ingredients:
3 tbsp (40 mL) chocolate syrup
1/2 cup (125 mL) cold milk
3/4 cup (175 mL) cold soda water

Preparation:
Using well chilled ingredients, place the chocolate syrup in the bottom of a tall glass. Slowly pour in the milk. Pour the sods water straight down the centre of the glass to produce a thick white foam. Use a long handled spoon to carefully stir the chocolate and milk together without disturbing the foam. Drink immediately.Root Beer Float
This recipe is also great with ginger ale, cola, or your favourite soft drink.

Servings: 1 serving

Ingredients:
8 oz (250 mL) root beer
1/2 cup (125 mL) vanilla ice cream
whipped cream (optional)
maraschino cherry (optional)

Preparation:
Pour root beer into a tall glass. Float the scoop of ice cream over the root beer, allowing it to touch the rim of the glass without submerging it into the soft drink. Top with whipped cream and a maraschino cherry.
