Sweet and savoury coconut oil recipes

If you're looking to cook with coconut oil, you can use it with some of our Tested-Till-Perfect recipes. Simply substitute the butter or oil in a recipe for coconut oil for an added tropical flavour. Try adding coconut oil to some of the curries, granolas or coconut milk-based recipes below.

When substituting coconut oil for butter or other oils, keep in mind that coconut oil may add a strong coconut flavour to your dish.

Cooking with coconut oil
Coconut oil is a highly stable fat, so it's ideal for frying and cooking with high heat. Because of its stability, coconut oil has a long shelf life. It should be stored in a cool, dark place and can be kept for up to two years. It's also one of the few plant-based, tropical saturated fats. As with all saturated fats, make sure to limit your consumption of coconut oil.

Where to buy coconut oil
Look for coconut oil at your local health food or organic store, or in the health food section of your grocery store.

Types of coconut oil
There are three types of coconut oil: virgin coconut oil, refined coconut oil and organic coconut oil. Virgin coconut oil comes from fresh coconut meat and was not extracted using chemicals or high temperatures. Refined coconut oil has a high smoking point but has been refined, bleached and deodorized. Organic coconut oil comes from coconuts that have been grown in organic manure.

Fruit-and-Nut Granola
This recipe from my sister Rochelle is now part of our breakfast repertoire. Enjoy it with milk or sprinkled over yogurt.

Granola Crumble Yogurt Topper
Eating breakfast helps counter cravings later in the day. This sweet and crunchy combination is best sprinkled on plain or vanilla yogurt. The chocolate variation is best eaten right out of hand -- it beats a chocolate bar any day.

Tropical Granola Clusters with Brazil Nuts
Although known as nuts, Brazil nuts are considered by botanists to be seeds, as their meat is separate from their shells.

Toasted Oat Granola Bars
Toasting the oats and coconut adds a tasty twist to fruit-and-seed bars.
