In large saucepan or deep skillet, heat oil over medium-low heat. Add cumin seeds and cook, stirring constantly, about 2 minutes. Add onion and its juice, coriander seeds and thyme; season with salt and pepper. Cook for 5 minutes; increase heat to medium. Add tomatoes and cook for 20 minutes more. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days or frozen for up to 3 months.)
