This sauce is excellent served with stuffed vegetables or fish. Transform it into a tasty vinaigrette by adding a little white balsamic or red wine vinegar.

In large saucepan or deep skillet, heat oil over medium-low heat. Add cumin seeds and cook, stirring constantly, about 2 minutes. Add onion and its juice, coriander seeds and thyme; season with salt and pepper. Cook for 5 minutes; increase heat to medium. Add tomatoes and cook for 20 minutes more. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days or frozen for up to 3 months.)



Grating the tomatoes first makes this sauce come together in a snap! The skin easily peels off and it cuts down the cooking time.
