In small saucepan, combine 1 cup each granulated sugar and water, 2 tsp grated fresh ginger, 7 cloves, 2 cinnamon sticks and 1 crushed star anise. Cook over low heat, stirring often, until sugar has dissolved. Remove from heat; let stand for 30 minutes. Pour mixture into glass jar and let stand for 48 hours. Strain before using. (Make-ahead: Can be refrigerated for up to 1 month.) Makes about 1 1/2 cups.
