Mexican-Style Corn Dip

On or off the cob, corn adds crunchy texture and delicious sweet flavour to tons of quick and easy meals and snacks.

In large skillet, heat butter and oil over medium-high heat. Add corn; cook, stirring occasionally, until golden, 6 to 8 minutes.

Place corn in bowl. Add mayonnaise and sour cream; toss to evenly coat corn. Add feta, cilantro, chili powder, garlic and lime juice, and jalapeño, if using; mix well. Season with pepper. Sprinkle with chopped cilantro, if desired. Serve with tortilla chips.
