Ingredients Matter
Chef Simon Jodoin-Bouchard, owner of Chez Simon urban canteen, says the fewer ingredients for your patty, the better. The meat is the star of the dish. Ditch the gourmet toppings in favour of a few classics: a soft bun, cheese, sauce/condiments, caramelized onions and pickles. (Of course, a slice of bacon is always welcome!)
Choose fairly fatty meat for the best experience. Season with salt and pepper. Caramelize onions and cook bacon on the griddle, then, without cleaning, cook your burgers. You'll get maximum flavour and crispy bits!
