Method

Apple-Marinated Salmon

In small saucepan, combine apple juice, pickling salt, ginger, thyme and garlic. Bring to boil, stirring, until salt is dissolved. Remove pan from heat; let cool completely. Place salmon in resealable plastic bag; pour in coo-led marinade. Close bag and turn salmon to coat well. Marinate and refrigerate for 6 hours. (Make-ahead: Can be refrigerated for up to 24 hours.) Remove salmon from marinade (discard marinade); pat dry with paper towels. Slice salmon; refrigerate and set aside. 

Glazed Radishes & Lemon Cream

In small skillet, melt butter over med­ium heat. Add radishes; cook, stirring often, about 2 minutes. Add broth; cook until completely eva­porated, about 6 minutes. Season with salt and pepper. 

Meanwhile in small bowl, combine crème fraîche, lemon zest and juice; season with salt and pepper. 

Spread Lemon Cream in centre of serving platter. Top with Apple-­Marinated Salmon and Glazed Radishes. Garnish with apple. Sprinkle with microgreens.
