Baked Plantain Fries

Preheat oven to 425°F. Line baking sheet with parchment paper. In large bowl, toss plantain sticks with mayonnaise to coat well. Sprinkle with cornstarch and Cajun spice blend; toss to coat well. 

Spread plantain sticks in single layer on prepared baking sheet. Bake in centre of oven, turning halfway through cooking time, until fries are tender and golden, about 20 minutes. Serve with Spicy Ketchup.

Spicy Ketchup

In small bowl, combine 1/2 cup ketchup, 1 tbsp brown sugar and 1 tsp each Worcestershire sauce and sriracha. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days.) Makes about 1/2 cup.

Test kitchen tip

To peel plantains, cut the ends off with a knife, then score the peel all the way down in strips about 1 inch wide (don’t cut too deeply or you’ll damage the fruit). Remove the strips one by one using the knife.
