Baked Salmon With Mango Salsa

Method

Set oven rack in highest position; preheat oven to broil. Line baking sheet with nonstick foil.

Place salmon on prepared baking sheet; brush salmon with oil and season with salt and pepper. In bowl, combine the barbecue sauce and jam. Brush each fillet with about 2 tbsp of the barbecue sauce mixture. Bake until glaze is browned and fish flakes easily when tested with fork, about 12 minutes.

Mango Salsa
Meanwhile, in bowl, toss together mango, avocado, red onion, tomato, jalapeño, olive oil, rice vinegar, ginger, honey and lime juice. Season with salt and pepper.

Transfer Salmon to serving dish; top with Mango Salsa. Serve with cooked white rice.
