Beef Meatballs

Preheat oven to 400°F. Line baking sheet with parch­ment paper. In large bowl, mix spinach, beef, Parmesan, onion, garlic, egg and bread crumbs until combined. Season with salt and pepper. Using your hands, shape mixture by rounded 2 tbsp into balls; place on prepared baking sheet. Bake until meatballs are no longer pink inside, about 15 minutes. (Leave oven on.) (Make-ahead: Can be cooled and stored in airtight container and frozen for up to 3 months.) 

Roasted Red Pepper Marinara

Meanwhile, in saucepan over med­ium heat, cook marinara sauce and roasted peppers, stirring occasionally, for 10 minutes. In blender or using immersion blender, purée mar­inara mixture until smooth. Season with salt and pepper, if desired.

Place Beef Meatballs in baking dish. Pour Roasted Red Pepper Marinara sauce over meatballs. Sprinkle with feta. Bake until cheese is lightly browned, about 10 minutes. Sprinkle with oregano leaves, if using. Serve with potato wedges, rice, pita bread or a green salad, if desired.
