Method

In saucepan, heat 3 tsp of the oil over medium heat. Add onion; cook, stirring occasionally, until tender, about 8 minutes. Add garlic, curry powder and paprika; cook, stirring constantly, 1 minute. Add strained tomatoes, vinegar, sugar and mustard. Reduce heat to medium-low; simmer 5 minutes. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days or frozen up to 3 months.)

Meanwhile, in skillet, heat remaining oil over medium-high heat. Add sausages; cook until heated through and golden brown, turning often, about 5 minutes. Transfer to cutting board; slice in 1/2-thick rounds.

Divide sausages among plates. Drizzle with tomato curry sauce and sprinkle with additional curry powder, if desired. Serve with fries.
