In large skillet with lid, cook bacon over medium heat until crispy, 5 to 7 minutes. Drain on paper towel-lined plate.
Remove all but 2 tbsp bacon fat from skillet. Add onion and cook, stirring occasionally, until softened, 3 minutes. Add cabbage and apples and cook, tossing occasionally with tongs, until apples begin to soften, about 5 minutes.
Stir in wine; deglaze skillet, scraping up browned bits with wooden spoon. Stir in vinegar; season with salt and pepper. Cover and reduce heat to low.
Cook, stirring once halfway through cooking time, until cabbage and apples are tender, about 8 minutes. Stir in bacon; cook for 2 minutes until mixture is heated through. Sprinkle with parsley, if using.
