In large nonstick skillet, heat oil over medium-high heat. Add chicken; cook, stirring occasionally, for 5 minutes. Add onion; cook, stirring occasionally, for 2 minutes. Add red pepper, Cajun seasoning and Montreal steak spice; cook, stirring often, for 2 minutes. Remove from heat.
Brush brioche slices with Garlic Sauce. Place 2 slices of Swiss cheese on each of half of the brioche slices and top with chicken-vegetable mixture. Cover each with 2 slices of provolone, then with remaining brioche slices. Lightly butter the outside of each sandwich on both sides.
In large nonstick skillet, cook sandwiches, pressing down with spatula and turning halfway through cooking time, until cheese is melted and bread is crispy and golden, 6 to 8 minutes. Serve with cucumber wedges and kettle chips, if using.
🥣 Garlic Sauce In bowl, whisk 1 cup mayonnaise with 2 cloves chopped garlic, 2 tbsp Dijon mustard and 1 tsp maple syrup. Season with salt and pepper. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 week.)
