Place potatoes in large saucepan; cover with cold water. Season with salt. Bring to boil over medium-high heat. Reduce heat; simmer until potatoes are tender, about 20 minutes. Drain and return to saucepan.

Mash potatoes. Add butter and cream, mixing well until butter is melted. Heat over low heat. Add Cheddar in 3 additions, stirring with a wooden spoon until cheese is melted. Season with salt and pepper. (Make-ahead: Can be refrigerated in airtight container for up to 2 days.)
